By Andrea Flint Basil is one of the most popular herbs used in cooking today. It is a very versatile herb, and is used in Italian, Thai and Vietnamese cuisines amongst many others. It has a warm, aromatic but gentle flavor, with a hint of spicey aniseed. It’s well known that it goes extremely well with tomatoes, where it can be served raw in salads such as the classic Italian Caprese, or cooked into a rich tomato sauce for pasta or other hot dishes. Basil is also popular as the prime ingredient of pesto sauce (known as pistou in France), which is made by pounding fresh basil leaves with pine kernals, olive oil, parmesan cheese and garlic to produce the distinctive thick green sauce so often used with spaghetti or as a dipping condiment. Like most herbs, basil is widely available in both fresh and dried forms. Again like most herbs, the fresh version is generally considered to be superior. If you come across a cheap and bountiful supply of the fresh herb, you can dry it slowly in a very low oven before crumbling it and storing in airtight jars. This method of preserving it costs much in terms of flavour though, and a better option is to puree the leaves and freeze into ice cubes, which can then be dropped from frozen straight into the recipe you’re cooking. Basil can be quite expensive to buy in the fresh form, so if you become a fan of the herb you might like to try growing it yourself - it’s much cheaper that way, and you can also ensure that the leaves you’re using will be as fresh as can be! It’s also one of the easier herbs to grow and so is ideal for beginners. Basil is a native of warm climates, and so needs to be planted in a sunny and sheltered spot if it is to flourish. If you have a patio or terrace with a south facing wall, then sowing it in a pot there is ideal. It’s all the better too if you can grow it close to your kitchen for easy picking whenever you need it! Left to itself, basil will tend to grow into a tall, thin, ungenerous-looking plant with little in the way of edible leaves. You can encourage a more rewardingly bushy growth by ‘pinching out’ the plant as it grows, removing the top young leaves to encourage more sideways growth. Harvesting the herb regularly will also encourage more vigorous growth. Basil is a tender annual, and will die off quickly in cold weather. You may be able to prolong its life by bringing it indoors at the first sign of a cold snap, or you could sow a succession of new plants indoors for a year-round supply. Although it is mainly a culinary herb, basil does have some minor antiseptic properties, but is not widely used medicinally by herbalists. It is however a member of the wider mint herb family, and in common with its relatives it’s said to be a good digestive aid. There are many varieties of basil available, but the most popular are the Genovese type which gives the typical authentic italian flavour and aroma, and the purple-leaved ‘holy’ basil which is used more often in Asian cooking. Whichever variety you choose, and whether you decide to buy it or grow it, basil is a treat for your senses and a great addition to your culinary toolbox. In a joint effort with the distributors and The William J. Clinton Foundation and the American Heart Association, the distributors have agreed to eliminate regular soda sales in our nations schools. This agreement shall be implemented by the 2008-2009 school year. It calls for only water, juices, and milk to be sold in elementary and middle schools, and diet sodas, unsweetened teas, fitness water, sports drinks, flavored waters, and seltzers in high schools. This ban on regular sodas applies during the regular or extended school day, and includes during after school activities. This agreement will effect an estimated 75 percent of our nations schools or 35 million students. Keep in mind that this ban on regular sodas accounts for about 45 percent of beverage sales in schools during the 2005 school year. While this is certainly a step in the right direction for our public schools and our overweight children, I am still troubled by the fact that diet sodas are considered safe. ‘New’ Judas Story Just Revisionist Fluff

By Tad Cronn Attention, conspiracy theorists: We are happy to announce the next New York Times best seller, “The Gospel of Judas.” Soon to be a major motion picture starring Tom Hanks — wait, scratch that last part; that was “The DaVinci Code.” A recently translated codex that scholars purport to be the long-lost “Gospel of Judas” is supposedly shaking up traditional views of Christianity by depicting Judas as Jesus’ best friend and a bearer of “secret knowledge” who was only following Jesus’ orders when he sold out to the Pharisees. “Judas the hero” is the headline of the day on TV, radio, Web sites and newspapers. From all the media hoopla, you’d think clergy across the land were shrugging their shoulders in futility and shutting the church doors, never to sermonize again. It’s the same sort of glee with which the media trumpeted the success of “The DaVinci Code” and with which they tout any discoveries that “challenge” traditional Christianity. The appropriate response from Christians should be a collective yawn. The relationship of “The Gospel of Judas” to the facts of Jesus’ life is akin to the relationship of the pop song “Rock Me, Amadeus” to classical music. The earliest mention of a “Gospel of Judas” comes from St. Irenaeus, circa 180 A.D., in “Adversus Haeresis” (Against Heresy). Irenaeus refers to a Gnostic sect calling itself Cainites. In their gospel, according to Irenaeus, Judas was portrayed as a man who knew secret lore about Cain and other “truths” that led him to betray Jesus. The recently translated manuscript is the only known copy of “The Gospel of Judas.” It surfaced sometime in the 1990s and has been carbon dated back to the third or fourth centuries. The translation of the manuscript portrays Judas as following Jesus’ orders when he went to the temple and sold out the Messiah. Part of the translation says of Judas in relation to the other disciples: “But you will exceed all of them. For you will sacrifice the man that clothes me.” So, far from betrayer, Judas is the enabler, even a hero. Holy plot twist! Actually, it’s just typical Gnostic fluff, but this story has legs for the same reason “The DaVinci Code” became a best seller. Both are suited perfectly to take advantage of the public’s ignorance of history. There are plenty of Gnostic so-called “gospels” floating around, most of them claiming to relate the “real story” about some aspect of Jesus’ life that was overlooked by the accepted Gospels and apostolic writings. This was the inspiration for “The DaVinci Code” and the book “Holy Blood, Holy Grail” years before it. According to Bible revisionists, these widely accepted gospels were excised from the Bible by closed-minded men at the Council of Nicaea who forced people to accept the radical notion that Jesus was divine. Reality check: The Council of Nicaea dealt with the issue of Arianism, which denied that Jesus and the Father were equal. Of the 250-300 bishops present, only a few opposed the Nicene Creed as it was formulated. Their opposition was to the use of wording that was not in the Bible, though not to the ideas expressed in the creed. The supposed “new idea” of Jesus as divine had already been accepted doctrine since the first century. By the way, the other burning issue at this gathering of supposed radicals? When to celebrate Easter. No editing. No burning of heretics. No suppression of ideas. The bishops merely expressed very succinctly what had always been Christian canon. The simple fact is that Gnostic groups were never as widely popular as revisionists would have us believe. They weren’t even a cohesive movement, but just a variety of cultic groups who held several general views in common, among them that creation itself is flawed and evil; the body is a hindrance, a mere vessel for the more-important spirit; women especially are corrupt; and one can only be saved by “secret” knowledge which — big surprise — the cult was the keeper of. Such groups existed before Jesus’ time, and when Christianity began to grow, cult leaders must have realized a bonanza when they saw it. Previously, the cults’ “mysteries” were linked to various mythological characters and pantheons. The opportunity to link them to a historical figure whose actions had taken on legendary proportions must have been seen as highly lucrative. These Gnostic cults were elitist, and their members took a dim view of the rapidly spreading Christianity. The pagan philosopher Celsus complained that Christians did not demand virtue and wisdom as prerequisites for salvation, whereas the mystery cults preserved their knowledge for the elect. Naturally, the more money a potential initiate spread around, the greater his “virtue.” “The Gospel of Judas” is no different. Written very late to be considered in any way authoritative, it also faces the unique difficulty that its supposed source, Judas, killed himself. I suppose that Judas conceivably could have thrown the 30 silver coins back in Caiaphas’ face, stopped off for coffee, and written down or related the “real” events of the previous week before going off to hang himself, but I find myself strangely skeptical on this point. But loose facts and logic never stopped a good story. Maybe Tom Hanks will be available for this movie, too: “Life is like a box of bad chocolates. Now the video world is coming into the handheld market - virtually every cell phone has a screen of some sort and the recent iPods have video screens as well. Apple’s most recent product introduction is the much-hyped iPhone, which combines the functions of a cell phone, a “wide screen” iPod with touch controls, and an Internet communications device. Apple has chosen to make an exclusive deal with Cingular, the AT&T cell phone network. Your only source for an iPhone will be through Cingular, along with a Cingular cellular service contract. They plan to make the product available in June. Back in the digital dark ages, Apple made the choice to keep their computer operating system in house, while Microsoft moved beyond IBM and licensed to any computer manufacturer who wanted it. It was the most important misstep that Apple has ever made, and is the reason that they will probably never extend beyond ten to twelve percent of the computer market. It will be interesting to see what happens when iPhone clones begin to appear in Verizon and other cell operator outlets. The 4GB iPhone model will cost $499 with a two-year contract and $599 for the 8GB version (also with a two-year contract). Those are expensive phones, but Apple is in a unique position in that it has a dedicated core of iPod fans that may become Cingular converts. The iPhone’s design is cutting edge: it has done away with keypads and with the exception of a “home” button the controls are operated on a 3.5 inch square touch screen. According to early reviews the videos and photos look great. One giant touch screen controls the phone, the picture component and the videos - no stylus needed. For text messaging, there will be an onscreen keyboard - again controlled by touch. Apple’s iTunes store has gone into the video business, most recently negotiating a distribution contract with Paramount. Videos are downloaded onto the iPhone the same way that music is: through a wired connection to your computer. Apple’s decision to push the viability of the iPhone as a video viewing device raises a couple of questions. The first is how satisfactory watching a movie on a three and a half inch screen will be, and the second is whether or not 8GB is enough to manage a library of music and video content. The current largest video iPod model has 60GB of space, in comparison. For Internet and video functionality, the iPhone runs on the most recent Mac operating system. It has a 2 megapixel camera and promises support for Google maps, conference calling, and text and multimedia messaging. In short, all the features are included that young people use their phones for today, along with increasing numbers of traveling execs. The iPhone has Bluetooth and WiFi connectivity and includes both email software and a browser. If you judge by the hype, Apple is betting big on the iPhone. It’s worth noting, however, that Steve Jobs is pretty good at hyping every new Apple product. But the integration of telecommunications, video, and full blown Internet interconnectivity into the revered iPod is a major step - and the cell service completes an impressive multimedia package.
